Chicken and Biscuit Kabobs

This was something simple I had found in the Better Homes & Gardens New Cook Book that was pretty fun to make.


You’ll Need:

A can of biscuits (I used country style)
Frozen popcorn chicken
Kabob skewers
Honey
Melted butter


How to:

Start by preheating your oven to 400°F and get out an ungreased baking sheet. Get a good handful of the chicken and microwave for a minute to soften. Take the biscuits, open, and separate them. Cut them in half and alternate pieces of biscuit and chicken on the skewers leaving a little space between each piece. Note: A can of 10 biscuits will yield 5 skewers if using 4 pieces to a skewer.

Once done, put them in the oven and let them bake for at least 10 minutes to get the biscuits starting to turn golden brown. Keep an eye on them after 10 minutes until they turn the desired color. This took 13-14 minutes overall cooking for my oven.

As they cool off, you can take a few good spoonfuls of butter or half a stick and melt it in the microwave. Add about 3 tablespoons of honey and mix well. You can either drizzle it over the skewers or use it as a dipping sauce.

This was one of Paula Deen’s many awesome recipes that was on a show of hers. You can do so much with it and her original recipe of this was for Chili in a Biscuit Bowl.

You need:

2 Cups Bisquik
2/3 Cup of milk

Preheat the oven to 450 degrees F. Invert a muffin tin and spray the underside with a cooking spray.

Mix the bisquick mix with milk and shape it into a ball. Put on a floured surface and knead it 3 or 4 times. Divide it into 6 pieces and roll each piece into a 6-inch circle.* Place a dough circle over the back of each muffin cup and press around the cup to form a bowl shape.

*Alternate way – roll it out after kneading and use a small serving bowl the size of a 1/3 or 1/2 measuring cup to cut out the circles to place on the inverted muffin tin.

Bake for 10 to 12 minutes, until lightly browned. Let it slightly cool. Remove the biscuit bowls and fill ‘em up and serve.

I do this for breakfast bowls filling it with eggs, a sausage patty, and either melting cheese on top or pouring sausage gravy on it. Very wonderful recipe, and you can do so much with it. It doesn’t just have to be chili or breakfast items stuffed in it, you could probably put mashed potatoes and gravy in it for a new way to serve potatoes at your next dinner. Experiment with it and make it your own meal addition.
