This happens to be my boyfriend’s favorite comfort food that he always had as a kid. It’s a great pick-me-up when you’re feeling down or just need that taste of childhood back.
4 Slices of bread
Butter
2 Slices of Mozzarella cheese
2 Slices of American cheese or Cheddar
It’s best to set up a skillet to be heating up as you do the prep work. You can use a big one, but I find it hard to keep up with both sandwiches so I use a medium sized skillet that one sandwich can fit comfortably in. You’ll want a medium-high heat. If your stove goes by numbers like mine does, 6.5-7 is a good start.
Now, you’ll want to butter the outsides of the bread so that when it goes in the pan, it doesn’t stick. It also makes the bread buttery and nicely golden. I’ve also buttered the inside, but that’s a bit too much work for something simple. My mother would use mayo for hers so if you prefer that, you can go for it. Again, I think too much work for a simple meal. So outsides buttered, and once the pan is warm enough, you can place some butter to be melted in the pan or use a buttery nonstick spray.
Now the yummy sandwich making starts. Place the bread in the pan butter side down. Go ahead with a spatula and try to flatten it some so it starts heating through. Take a slice of mozzarella and american or whatever your preference is, and place them on the bread topping it off with the other piece of bread butter side up. Just flatten it down, the spatula may stick to the bread, it’s fine, just peel it off the butter. It will take a couple minutes to start getting golden on the bottom. Once it has, flip it and repeat squishing to make it even. You can brown it to what you desire. If you want it almost burnt, leave it alone and it’ll get there quick enough. If you want it lightly golden, give it just a couple minutes. Once you have your desired color and melted cheese-ness, take it off the heat and onto the plate. Repeat for your next sandwich.
If you’re like me, and occasionally want tomato soup to go with it and dip it in, you can spice it up a bit.
1 Can tomato soup
Pepper
Salt
Parsley (optional)
In a small dish, heat up the soup until desired warmth. Just sprinkle a nice dose of salt and pepper to your tastes and mix. If you really want to be adventurous with it, add some parsley. Once mixed, it gives it more of a flavor and becomes an excellent dip for your awesome grilled cheese sandwiches.
You can always experiment with spices for your soup. If you want to add some garlic powder, you can do it. Find whatever makes you happy and make the comfort food your own comfort.
